Sayadieh Fish and Rice
60 minutes · 4 servings · omnivore
A simpler home version of the Levantine fish-and-rice dish, with caramelized onions and warm spices.
Ingredients
Check you have the quantities below.
- 1 1/2 lb (680 g) white fish fillets
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup flour
- 3 tbsp olive oil
- 3 large onions, thinly sliced
- 2 cups rice, rinsed
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 3 1/2 cups water or fish stock
- 1/4 cup pine nuts or almonds
Let’s make it
- Season fish with salt and pepper, lightly dust with flour, and pan-sear in 2 tbsp oil for 2 to 3 minutes per side. Finish in a 400 F/200 C oven for about 6 minutes until it reaches 145 F/63 C.
- Cook onions in remaining oil over medium heat for 15 to 20 minutes until deeply browned.
- Add rice, cumin, turmeric, stock, and half the onions. Simmer covered 18 to 20 minutes until rice is tender.
- Top with fish, nuts, and remaining onions before serving.
Remove any small fish bones carefully and keep the spice gentle.
