Spinach Fatayer

50 minutes · 6 servings · vegan

A common Levantine spinach pie, made with store-bought dough for ease.

Ingredients

Check you have the quantities below.

  • 1 lb (450 g) ready-made pizza dough
  • 8 cups fresh spinach, chopped
  • 1 medium onion, finely chopped
  • 3 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tbsp sumac
  • 1 tsp salt
  • 1/4 tsp black pepper

Let’s make it

  1. Heat the oven to 450 F/230 C. If the spinach is very wet, squeeze it dry.
  2. Mix spinach, onion, lemon juice, oil, sumac, salt, and pepper.
  3. Roll the dough and cut into 12 circles. Place a spoonful of filling in each and pinch into triangles.
  4. Bake 12 to 15 minutes until golden.

Triangle shapes are fun for kids and easy to hold.

Cooking time varies with equipment and batch size. Follow school allergy rules for children’s meals; keep perishable lunches cold.
